“Pasta Primavera with Shrimp is a delicious and colorful dish that combines a variety of fresh vegetables, succulent shrimp, and perfectly cooked pasta. Additionally, this recipe serves 4 to 6 people, depending on portion sizes. Let’s get started!”

Ingredients for Pasta Primavera:

  • 12 ounces (340g) penne pasta or your favorite pasta shape
  • 1 tablespoon salt (for boiling pasta)
  • 2 tablespoons olive oil

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste

  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup baby spinach leaves
  • 1/4 cup fresh basil leaves, thinly sliced
  • 1/4 cup grated Parmesan cheese

  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions for Pasta Primavera:

Cook the Pasta:

  • In a large pot, bring water to a boil, adding a tablespoon of salt to the water. Cook the pasta according to the package instructions until it’s al dente. Drain the pasta and set it aside.

Prepare the Shrimp:

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add minced garlic and red pepper flakes, stirring until fragrant, about 30 seconds.
  • Add the shrimp to the skillet, season with salt and black pepper, and cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Cook the Vegetables:

  • In the same skillet, add another tablespoon of olive oil if needed. Add the sliced zucchini, yellow squash, red bell pepper, and cherry tomatoes. Cook for about 3-4 minutes until the vegetables start to soften.
  • Stir in the broccoli florets and continue to cook for an additional 2 minutes.
  • Add the baby spinach and sliced basil leaves, and cook until the spinach wilts slightly.

Make the Creamy Sauce for Pasta Primavera:

  • In a small saucepan, combine the heavy cream and chicken or vegetable broth. Bring the mixture to a simmer over medium heat.
  • Stir in 1/4 cup of grated Parmesan cheese and let the sauce simmer for a few more minutes until it thickens slightly. Season with salt and black pepper to taste.

Combine Everything:

  • Add the cooked pasta and shrimp to the skillet with the vegetables. Subsequently, pour the creamy sauce over the mixture, tossing everything together to coat the pasta and shrimp evenly with the sauce.

Serve your delicious Pasta Primavera:

  • Garnish with additional grated Parmesan cheese and some freshly ground black pepper if desired.
  • Serve the Pasta Primavera with Shrimp immediately and, consequently, enjoy the flavors of the fresh vegetables and succulent shrimp in a creamy, satisfying sauce!

Note: Feel free to customize the recipe by adding other vegetables of your choice, such as asparagus, peas, or carrots. You can also adjust the spice level by adding more or less red pepper flakes. Enjoy!
